Sweet 16... {February 21, 2010}


Okay, okay.  Dorky right?  I just couldn't help it.

We were going family dinner, like we do every Sunday, and Junior asked me to make a cake for dessert.  Well, just so happened it was Reagan's 16 month birthday, and it was JUNIOR's idea that we sing to her.  Birthdays are her favorite right now, and singing to anyone is just more excitement than she can handle.  SOOOO...  Why not?  Sweet 16 right?!

Any excuse to have cake!

She actually tried to blow out the candles too, she just needed a little help : )


THE CAKE:

Regular boxed cake mix -  (butter recipe yellow)
mix in @ 4 tbsp of applesauce into batter
(won't taste like apples, just makes it moist)

THE ICING:
first time actually making icing, and I have to say... pretty darn good!
1 cup butter (no substitutes) softened
4 1/2 cups confectioners sugar
1 1/4 cup baking cocoa
1/2 tsp vanilla
1/2 cup milk

In a large mixing bowl, cream butter. Gradually beat in confectioners' sugar, cocoa and vanilla. Add enough milk until frosting reaches spreading consistency. It's messy, but SO worth it.  I will never by the canned stuff again : )

This was all Reagan's idea. 
She kept trying to push Cirsie into the box.  Once I put her in, Reagan kept climbing in and out, in and out.  But did NOT want to let Cirsie out yet.  She was having fun... right?

Look at Cirs' face... "let me out!"
